Tonight I made a small batch of my favorite frosting to top them. This cream cheese recipe is very frugal and can be used to top just about anything. Definitely not just for carrot cake. We even use it as soft pretzel dip. To make this sweet cheesy frosting you will need:
Let the butter and cream cheese soften to room temperature. In a bowl cream the butter and cream cheese together. Slowly mix in the sugar and vanilla. This doesn't need to be done with a mixer. I use a fork and cream it by hand. As you gradually add the sugar it gets easier to mix. For chocolate frosting add 1/2 cup cocoa instead of vanilla. For lemon add lemon extract instead of vanilla. This is enough to frost one pan of brownies or an 8 inch cake. If you need more than that just double the recipe. This cheesy frosting tastes great on this applesauce muffins recipe.
