A fun way to eat avocados and frugal when stacked against the cost of less healthy, ready made dips, this quick guacamole recipe can be tweaked according to taste. The mild flavor and creamy, buttery texture of the avocados make it a great choice for kids. Try the original Guacamole recipe, or the variations for a spread or dip. Guacamole Salsa
Let avocados ripen until they feel soft. Split in half and scoop the avocado into a mixing bowl. Pour the salsa, 1 Tbsp lime juice (use lemon juice if that's all you have), 1/2 tsp garlic powder, and a pinch of salt to taste, in the avocado and mix until well blended. Chop fresh cilantro and add to taste. We love cilantro so I add roughly 2 Tbls chopped fresh. You can also use dried but cut the amount in half. If you're using hot sauce mix it in here. Serve immediately with your choice of tortilla chips. *** For salad dressing simply add olive oil and/or citrus juice, one tablespoon at a time, to the original recipe and blend until pourable. Add salt, pepper, and garlic powder to taste. Some prefer making the dressing by adding mayo but olive oil keeps the recipe heart healthy. Creamy Guacamole SpreadWith a richer, creamier texture this spread is great on sandwiches or even on it's own as a dip. Make the original Guacamole Salsa recipe then blend in 1-8oz. package of softened cream cheese. You can make this thicker by adding more cream cheese. Or make it a creamy dip by adding more citrus juice, or drizzling in a little olive oil and mixing until well blended. When you're done, save one of the avocado seeds and let your kids try to grow an avocado tree. |
