Potato Chip Cookie: Recipe for an easy to make classic cookie

This unusual Potato Chip Cookie recipe has been around forever, but I've never made it until now. It was a huge hit with my kids and in addition to really liking the taste, I LOVE the fact that they're so fast and easy to make.


Ingredients:

  • 1 cup softened Butter
  • 1/2 cup Sugar
  • 1 tsp. Vanilla
  • 1 3/4 cups Flour
  • 1 cup crushed Potato Chips

Preheat oven to 350.

  1. Fill a quart size baggie with plain potato chips and let the kids pound them into potato chip dust. Make sure they don't get carried away and pop a hole in the bag. This should get you about 1 cup of crushed chips.

  2. Cream the butter and sugar until fluffy.

  3. Add 1 tsp. of vanilla then gradually pour in the flour until well blended

  4. Drop the cookies a teaspoon at a time onto an ungreased cookie sheet.

  5. Bake for 12 to 15 minutes until edges are golden.

  6. Makes 3 dozen cookies
We decorated some of the Potato Chip Cookies with colored sugar. You can also drizzle them with chocolate or even caramel.
