Potato Chip Cookie: Recipe for an easy to make classic cookie

This unusual Potato Chip Cookie recipe has been around forever, but I've never made it until now. It was a huge hit with my kids and in addition to really liking the taste, I LOVE the fact that they're so fast and easy to make. Ingredients:- 1 cup softened Butter
- 1/2 cup Sugar
- 1 tsp. Vanilla
- 1 3/4 cups Flour
- 1 cup crushed Potato Chips
Preheat oven to 350. - Fill a quart size baggie with plain potato chips and let the kids pound them into potato chip dust. Make sure they don't get carried away and pop a hole in the bag. This should get you about 1 cup of crushed chips.
- Cream the butter and sugar until fluffy.
- Add 1 tsp. of vanilla then gradually pour in the flour until well blended
- Drop the cookies a teaspoon at a time onto an ungreased cookie sheet.
- Bake for 12 to 15 minutes until edges are golden.
Makes 3 dozen cookies We decorated some of the Potato Chip Cookies with colored sugar. You can also drizzle them with chocolate or even caramel.
